Ingredients:
- 1 pound pork sausage
- 1 cup bread crumbs
- 1/2 cup onion, finely chopped
- 1/2 cup celery, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh sage, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg, beaten
- 1/2 cup all-purpose flour
- 1 large egg, for egg wash
- 1 cup seasoned bread crumbs
Instructions:
- Chop onion, celery, and herbs finely; set aside.
- In a skillet, sauté onion and celery on medium heat until tender, about 5 minutes. Add minced garlic and sauté for an additional minute until fragrant.
- In a large bowl, combine the sausage, cooked veggies, herbs, bread crumbs, egg, salt, and pepper. Mix until just combined.
- Cover the bowl and refrigerate the mixture for 30 minutes to firm up.
- Preheat the oven to 375°F (190°C). Scoop mixture into balls (about 1 ½ inches in diameter).
- Dredge each ball in flour, dip in beaten egg, then coat in seasoned bread crumbs.
- Place on a parchment-lined baking sheet and bake for 20-25 minutes until golden brown and cooked through.
- Remove from the oven and allow to cool slightly before serving.
