Ingredients:

  • 1 pound pork sausage
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh sage, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 1/2 cup all-purpose flour
  • 1 large egg, for egg wash
  • 1 cup seasoned bread crumbs

Instructions:

  1. Chop onion, celery, and herbs finely; set aside.
  2. In a skillet, sauté onion and celery on medium heat until tender, about 5 minutes. Add minced garlic and sauté for an additional minute until fragrant.
  3. In a large bowl, combine the sausage, cooked veggies, herbs, bread crumbs, egg, salt, and pepper. Mix until just combined.
  4. Cover the bowl and refrigerate the mixture for 30 minutes to firm up.
  5. Preheat the oven to 375°F (190°C). Scoop mixture into balls (about 1 ½ inches in diameter).
  6. Dredge each ball in flour, dip in beaten egg, then coat in seasoned bread crumbs.
  7. Place on a parchment-lined baking sheet and bake for 20-25 minutes until golden brown and cooked through.
  8. Remove from the oven and allow to cool slightly before serving.
