Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • ¾ cup (180ml) warm water (about 110°F/43°C)
  • 1 tablespoon unsalted butter, melted
  • 2 cups (200g) shredded cheese (such as cheddar or a blend)
  • 1 cup (240ml) sour cream
  • 2 large eggs
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh chives (optional)
  • 4 cups (950ml) water
  • ⅓ cup (80g) baking soda

Instructions:

  1. In a small bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. In a large bowl, combine flour and salt. Add activated yeast mixture and melted butter. Stir to combine. Knead dough until smooth (about 5-7 minutes). Cover and let rise for 30 minutes.
  3. In another bowl, whisk together eggs, sour cream, garlic powder, onion powder, salt, and pepper. Fold in shredded cheese and chives (if using).
  4. Preheat oven to 375°F (190°C). Roll out dough into a large circle. Transfer to a greased pie dish.
  5. Pour cheese filling into the dough-lined pie dish.
  6. In a saucepan, bring water and baking soda to boil. Carefully dip the edges of the filled pie into the soda bath for 30 seconds.
  7. Bake for 25-30 minutes until golden brown.
  8. Allow to cool for 10 minutes before slicing. Serve warm.
