Ingredients:
- 2 cups fresh okra, sliced into ½-inch rounds (approximately 240g)
- 1 cup sweet corn, fresh or frozen (about 150g)
- 2 cups ripe tomatoes, diced (about 300g)
- 1 medium onion, diced (about 150g)
- 2 cloves garlic, minced
- 2 tablespoons olive oil (30ml)
- Salt and pepper, to taste
- ½ teaspoon smoked paprika (optional)
Instructions:
- Rinse and slice okra, dice onion and tomatoes, and mince garlic.
- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and sauté for another minute until fragrant.
- Add sliced okra to the skillet and season with salt, pepper, and smoked paprika. Sauté for 5-7 minutes until okra is tender.
- Mix in the sweet corn and diced tomatoes. Stir well and let the mixture simmer for 8-10 minutes, allowing flavors to meld.
- Taste the dish and adjust seasoning if necessary.
- Serve warm as a side or light main dish. Enjoy!
