- 1 teaspoon paprika (2g)

- Fresh parsley, chopped (for garnish)
- Feta cheese, crumbled (for a tangy finish; about 1/4 cup or 40g)
Instructions:
- Preheat the oven to 425°F (220°C).
- Wash and peel the sweet potatoes.
- Cut sweet potatoes into even cubes (about 1-inch pieces) for uniform cooking.
- In a mixing bowl, combine olive oil, salt, pepper, paprika, and thyme.
- Add sweet potato cubes to the bowl and toss until well coated with the oil and seasoning mixture.
- Spread the sweet potatoes in a single layer on a baking sheet—use parchment paper for easier cleanup.
- Roast in the oven for 30-35 minutes, flipping halfway through, until golden brown and tender (a fork should easily pierce them).
- Garnish with fresh parsley and feta, if using, and serve warm.
