Ingredients:

  • 4 medium sweet potatoes (about 2 pounds or 900g)
  • 3 tablespoons olive oil (45ml)
  • 1 teaspoon salt (5g)
  • 1/2 teaspoon black pepper (2g)
  • 1 teaspoon paprika (2g)
  • 1 teaspoon dried thyme (1g)
  • Fresh parsley, chopped (for garnish)
  • Feta cheese, crumbled (for a tangy finish; about 1/4 cup or 40g)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes.
  3. Cut sweet potatoes into even cubes (about 1-inch pieces) for uniform cooking.
  4. In a mixing bowl, combine olive oil, salt, pepper, paprika, and thyme.
  5. Add sweet potato cubes to the bowl and toss until well coated with the oil and seasoning mixture.
  6. Spread the sweet potatoes in a single layer on a baking sheet—use parchment paper for easier cleanup.
  7. Roast in the oven for 30-35 minutes, flipping halfway through, until golden brown and tender (a fork should easily pierce them).
  8. Garnish with fresh parsley and feta, if using, and serve warm.
