Ingredients:
- 1 lb (450g) chicken breast tenders
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 2 medium fresh apples, cored and diced (preferably Granny Smith or Honeycrisp)
- 1/4 cup honey
- Juice of half a lemon (about 2 tablespoons)
- Zest of one lemon
- 1 teaspoon ground cinnamon
- Pinch of salt
Instructions:
- Season the chicken tenders with salt and pepper on both sides.
- In a large skillet over medium heat, add olive oil. Once hot, add diced apples and sauté for about 3-4 minutes until they start to soften.
- Add honey, lemon juice, lemon zest, cinnamon, and a pinch of salt to the skillet. Stir well to combine all ingredients. Allow it to simmer for about 5 minutes, stirring occasionally until it thickens slightly.
- Push aside some apple pieces in the skillet to create space for chicken tenders. Add chicken tenders to the pan; cook for about 5-7 minutes per side or until cooked through (internal temperature should reach at least165°F /75°C).
- Once chicken is fully cooked
- Remove from heat and let rest for a couple of minutes before plating.
