Ingredients:

  • 1 lb (450 g) bok choy, trimmed and halved or quartered
  • 1 tablespoon (15 mL) vegetable oil or sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon (15 g) fresh ginger, minced or grated
  • 1 tablespoon (15 mL) soy sauce
  • 1 teaspoon (5 mL) rice vinegar
  • Pinch of red pepper flakes (optional)
  • Salt and pepper, to taste

Instructions:

  1. Prepare the bok choy: Clean and trim the bok choy, ensuring all dirt is removed. Halve or quarter depending on size.
  2. Heat the oil: In a large skillet or wok, heat the vegetable or sesame oil over medium-high heat until shimmering.
  3. Sauté aromatics: Add minced garlic and ginger, sautéing for 30 seconds until fragrant and golden.
  4. Add bok choy: Toss in the bok choy, stirring frequently to coat with the oil and aromatics.
  5. Season and stir: Pour in the soy sauce and rice vinegar, stirring well. Cook for 2-3 minutes until bok choy is tender yet still vibrant green.
  6. Finish with seasoning: Add red pepper flakes if using, and adjust salt and pepper to taste. Remove from heat.
  7. Serve hot: Transfer to a serving dish and enjoy!
