Ingredients:
- 1 lb (450 g) bok choy, trimmed and halved or quartered
- 1 tablespoon (15 mL) vegetable oil or sesame oil
- 3 cloves garlic, minced
- 1 tablespoon (15 g) fresh ginger, minced or grated
- 1 tablespoon (15 mL) soy sauce
- 1 teaspoon (5 mL) rice vinegar
- Pinch of red pepper flakes (optional)
- Salt and pepper, to taste
Instructions:
- Prepare the bok choy: Clean and trim the bok choy, ensuring all dirt is removed. Halve or quarter depending on size.
- Heat the oil: In a large skillet or wok, heat the vegetable or sesame oil over medium-high heat until shimmering.
- Sauté aromatics: Add minced garlic and ginger, sautéing for 30 seconds until fragrant and golden.
- Add bok choy: Toss in the bok choy, stirring frequently to coat with the oil and aromatics.
- Season and stir: Pour in the soy sauce and rice vinegar, stirring well. Cook for 2-3 minutes until bok choy is tender yet still vibrant green.
- Finish with seasoning: Add red pepper flakes if using, and adjust salt and pepper to taste. Remove from heat.
- Serve hot: Transfer to a serving dish and enjoy!
