Ingredients:

  • 3 cups (360g) all-purpose flour, plus more as needed
  • 1 tbsp (12g) granulated sugar
  • 1 ½ tsp (9g) salt
  • 1 packet (2 ¼ tsp / 7g) active dry yeast
  • 1 cup (240ml) warm water (110°F / 43°C - 46°C)
  • 2 tbsp (30ml) olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 cup (113g) shredded Italian cheese blend (mozzarella, Parmesan, provolone)

Instructions:

  1. Combine warm water, sugar, and yeast in a bowl. Let sit until foamy.
  2. Add olive oil, salt, and most of the flour to the yeast mixture. Mix until a shaggy dough forms. Gradually add remaining flour until the dough is soft and slightly sticky.
  3. Turn the dough onto a floured surface and knead until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let rise in a warm place until doubled.
  5. Punch down the dough and knead in the herbs and ¾ cup of the cheese.
  6. Shape the dough into a loaf and place it in a greased loaf pan or on a baking sheet.
  7. Cover and let rise again until puffy.
  8. Preheat the oven.
  9. Brush with olive oil, sprinkle with remaining cheese and herbs, and bake until golden brown and hollow-sounding.
  10. Cool on a wire rack before slicing and serving.
