Ingredients:
- 4 medium zucchinis (approx. 1.5 lbs or 680g)
- 3 tablespoons olive oil (45 ml)
- 4 cloves garlic, minced
- ½ cup grated Parmesan cheese (50g)
- 1 teaspoon salt (5g)
- ½ teaspoon black pepper (2g)
- 1 teaspoon dried Italian herbs (e.g., oregano, basil) (2g)
- Optional: Fresh parsley for garnish
Instructions:
- Preheat the oven to 425°F (220°C).
- Wash and dry the zucchinis. Slice each zucchini in half lengthwise, then cut into ½-inch thick half-moons.
- In a mixing bowl, combine olive oil, minced garlic, salt, black pepper, and dried Italian herbs.
- Add zucchini pieces to the bowl. Toss until evenly coated with the oil and garlic mixture.
- Sprinkle the grated Parmesan cheese over the zucchini. Toss gently to coat, then spread the zucchini in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20 minutes, or until the zucchini is tender and slightly golden brown, stirring halfway through for even cooking.
- Optional: Sprinkle with fresh chopped parsley before serving. Transfer to a serving platter and enjoy!
