Ingredients:

  • 4 medium zucchinis (approx. 1.5 lbs or 680g)
  • 3 tablespoons olive oil (45 ml)
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese (50g)
  • 1 teaspoon salt (5g)
  • ½ teaspoon black pepper (2g)
  • 1 teaspoon dried Italian herbs (e.g., oregano, basil) (2g)
  • Optional: Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Wash and dry the zucchinis. Slice each zucchini in half lengthwise, then cut into ½-inch thick half-moons.
  3. In a mixing bowl, combine olive oil, minced garlic, salt, black pepper, and dried Italian herbs.
  4. Add zucchini pieces to the bowl. Toss until evenly coated with the oil and garlic mixture.
  5. Sprinkle the grated Parmesan cheese over the zucchini. Toss gently to coat, then spread the zucchini in a single layer on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 20 minutes, or until the zucchini is tender and slightly golden brown, stirring halfway through for even cooking.
  7. Optional: Sprinkle with fresh chopped parsley before serving. Transfer to a serving platter and enjoy!
