Ingredients:

  • 1 lb ground beef (or turkey for a leaner option)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (28 oz) crushed tomatoes
  • 2 cups beef broth (or vegetable broth for a vegetarian version)
  • 1 packet taco seasoning mix (about 1.25 oz)
  • Salt and pepper to taste

Instructions:

  1. In a large pot or Dutch oven over medium heat, add the ground beef. Cook until browned, about 5–7 minutes. Use a wooden spoon to break up the meat as it cooks.
  2. Add the diced onion to the pot with the browned meat. Sauté for about 3–4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. To the pot, add black beans, kidney beans, corn kernels, crushed tomatoes with their juices, and beef broth.
  4. Sprinkle in the taco seasoning mix. Stir well to combine all ingredients. Season with salt and pepper to taste.
  5. Bring the soup to a boil over high heat. Once boiling, reduce heat to low and simmer uncovered for about 20 minutes. This allows flavors to meld together.
  6. Ladle hot soup into bowls. Offer optional toppings on the side so each person can customize their bowl.
