Ingredients:

  • 1 cup (95g) almond flour (blanched, finely ground)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar (or maple syrup)
  • 1 large egg
  • 1 cup (240ml) milk (dairy or non-dairy)
  • 2 tablespoons melted butter or coconut oil (plus extra for greasing the pan)
  • 1 teaspoon vanilla extract

Instructions:

  1. Whisk together almond flour, baking powder, salt, and sugar in a large bowl.
  2. In a separate bowl, whisk together egg, milk, melted butter/oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Don't overmix! A few lumps are fine.
  4. Heat a lightly greased non-stick frying pan or griddle over medium heat.
  5. Pour 1/4 cup of batter onto the hot pan for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface.
  7. Serve hot with your favorite toppings.
