- 15 ml Avocado Oil
- 120 ml Chicken Bone Broth
- 30 ml Fresh Lime Juice
- 15 ml Smoked Paprika
- 5 ml Ground Cumin
- 5 ml Garlic Powder
- 5 ml Onion Powder
- 2.5 ml Mexican Oregano
- 2.5 ml Chili Powder
- 5 ml Kosher Salt
- 2.5 ml Black Pepper
- 12 Corn Tortillas
- 1 cup chopped cilantro
- 1/2 red onion, finely diced
- 1 large avocado, sliced
- 60 grams Cotija cheese
- 4 lime wedges
Instructions:
- Prep and Season: Pat the chicken thighs completely dry with paper towels. Note: Moisture on the surface prevents a good sear. Toss the chicken in a bowl with the paprika, cumin, garlic powder, onion powder, oregano, chili powder, salt, and pepper until heavily coated.
- The over High heat Sear: Heat the avocado oil in your skillet over medium high heat until it starts to shimmer and dance. Place the chicken in the pan, ensuring they don't overlap.
- The Crust Formation: Cook the chicken for 5 minutes without moving them until a dark golden crust forms on the bottom. Flip and cook for another 4 minutes.
- Deglaze the Pan: Pour in the bone broth and lime juice. Note: This will bubble violently; use a wooden spoon to scrape up all the brown bits from the pan.
- Simmer and Soften: Reduce the heat to medium low and let the liquid simmer for 3 to 5 minutes until the sauce has reduced by half.
- The Quick Shred: Move the chicken to a cutting board. Use two forks to pull the meat apart into bite-sized shreds. It should pull apart easily.
- Re incorporate and Glaze: Toss the shredded meat back into the skillet with the remaining liquid. Cook for 2 minutes until the chicken has absorbed the sauce and looks glossy.
- Char the Tortillas: While the chicken rests, place your corn tortillas directly over a gas flame or in a dry pan for 30 seconds per side until they show small charred spots.
