Ingredients:
- 1 cup cooked chicken breast, shredded (can use rotisserie chicken)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup diced bell peppers (red or green)
- ¼ cup diced onions (optional)
- 4 large flour tortillas (about 10 inches in diameter)
- Cooking spray or olive oil for frying
Instructions:
- In a medium bowl, combine the shredded chicken, cheddar cheese, mozzarella cheese, diced bell peppers, and onions. Mix well until all ingredients are evenly distributed.
- Preheat a non-stick skillet over medium heat. Lightly grease it with cooking spray or a small amount of olive oil to prevent sticking.
- Place one tortilla on a clean surface and spread about half of your filling mixture onto one half of the tortilla. Fold the other half over to create a semi-circle.
- Carefully place the folded quesadilla into the hot skillet. Cook for about 3-4 minutes on each side or until golden brown and crispy; flip carefully using a spatula.
- Repeat steps #3 and #4 with the remaining tortillas and filling mixture until you have four cooked quesadillas.
- Once done, remove from heat and let them cool slightly before cutting each quesadilla into wedges (like pizza slices). Serve hot!
