Ingredients:

  • 1 cup cooked chicken breast, shredded (can use rotisserie chicken)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup diced bell peppers (red or green)
  • ¼ cup diced onions (optional)
  • 4 large flour tortillas (about 10 inches in diameter)
  • Cooking spray or olive oil for frying

Instructions:

  1. In a medium bowl, combine the shredded chicken, cheddar cheese, mozzarella cheese, diced bell peppers, and onions. Mix well until all ingredients are evenly distributed.
  2. Preheat a non-stick skillet over medium heat. Lightly grease it with cooking spray or a small amount of olive oil to prevent sticking.
  3. Place one tortilla on a clean surface and spread about half of your filling mixture onto one half of the tortilla. Fold the other half over to create a semi-circle.
  4. Carefully place the folded quesadilla into the hot skillet. Cook for about 3-4 minutes on each side or until golden brown and crispy; flip carefully using a spatula.
  5. Repeat steps #3 and #4 with the remaining tortillas and filling mixture until you have four cooked quesadillas.
  6. Once done, remove from heat and let them cool slightly before cutting each quesadilla into wedges (like pizza slices). Serve hot!
