Ingredients:
- 1 cup cooked and puréed Butternut Squash (plain)
- 1 Tbsp Olive Oil
- 1/2 tsp Dried Sage
- 1/4 tsp Nutmeg
- Pinch of Cayenne Pepper
- Salt and Freshly Ground Black Pepper, to taste
- 1 1/4 cups All-Purpose Flour
- 1 tsp Instant Dry Yeast
- 1/2 tsp Fine Sea Salt
- 150ml Warm Water
- 1 Tbsp Olive Oil (for dough)
- 1 cup Shredded Low-Moisture Mozzarella Cheese
- 3/4 cup Shredded Fontina Cheese
- 4 thin slices Prosciutto di Parma
- 1/4 cup finely grated Parmesan cheese
- 1 small Sweet Potato or Yam, peeled and thinly sliced
- Flour/Cornmeal for dusting
Instructions:
- Prepare the Squash Base: Combine puréed squash, olive oil, sage, nutmeg, cayenne (if using), salt, and pepper in a small bowl. Whisk until smooth. Set aside.
- Prepare the Face Components: Use a small, sharp knife to cut out the Jack-O’-Lantern face features (eyes, nose, jagged mouth) from the very thin slices of raw sweet potato.
- Prepare Dough (If making from scratch): Activate yeast in warm water. Combine flour and salt. Mix wet and dry ingredients; knead until smooth (about 8 minutes). Place in an oiled bowl, cover, and let rise until doubled (approx. 60-90 mins).
- Preheat Oven & Stone: Place pizza stone or steel in the oven. Preheat oven to 550°F (290°C) for at least 30 minutes.
- Shape the Dough: Punch down the dough, dust a pizza peel generously with flour/cornmeal. Stretch or roll the dough into a 12-14 inch circle.
- Assemble the Base: Spread the seasoned squash purée evenly over the dough, leaving a 1-inch border for the crust. Sprinkle the mozzarella and fontina cheeses evenly over the squash base.
- Place Face Cutouts: Carefully arrange the raw sweet potato facial features onto the cheese layer to form the Jack-O'-Lantern face.
- Bake: Gently slide the pizza onto the preheated stone/steel. Bake for 10-15 minutes, rotating halfway, until the crust is deeply golden and the cheese is bubbling.
- Finish & Serve: Remove pizza. Drape the prosciutto artfully over the top. Sprinkle with grated Parmesan. Slice immediately and serve piping hot.
