Ingredients:

  • 1 lb (454g) Ground Beef (80/20 blend recommended)
  • 1 medium Yellow Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 packet (approximately 1.25 oz / 35g) Taco Seasoning
  • ¾ cup (177ml) Water
  • 1 tbsp (15ml) Tomato Paste
  • Salt and Black Pepper, to taste
  • 12-16 Corn or Flour Tortillas (6-inch size)
  • Shredded Lettuce (Iceberg or Romaine)
  • Diced Tomatoes
  • Shredded Cheddar Cheese
  • Sour Cream
  • Salsa (mild, medium, or hot)

Instructions:

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it apart with a wooden spoon. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the taco seasoning, water, and tomato paste. Bring to a simmer and cook for 8-10 minutes, or until the liquid has reduced and the mixture has thickened slightly. Season with salt and pepper to taste.
  4. Warm the tortillas according to package directions.
  5. Fill each tortilla with the seasoned ground beef, shredded lettuce, diced tomatoes, shredded cheese, sour cream, and salsa.
  6. Serve the tacos while they're warm and the filling is fresh.
