Ingredients:
- 1 lb (454g) Ground Beef (80/20 blend recommended)
- 1 medium Yellow Onion, finely chopped
- 2 cloves Garlic, minced
- 1 packet (approximately 1.25 oz / 35g) Taco Seasoning
- ¾ cup (177ml) Water
- 1 tbsp (15ml) Tomato Paste
- Salt and Black Pepper, to taste
- 12-16 Corn or Flour Tortillas (6-inch size)
- Shredded Lettuce (Iceberg or Romaine)
- Diced Tomatoes
- Shredded Cheddar Cheese
- Sour Cream
- Salsa (mild, medium, or hot)
Instructions:
- Brown the ground beef in a large skillet over medium-high heat, breaking it apart with a wooden spoon. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Stir in the taco seasoning, water, and tomato paste. Bring to a simmer and cook for 8-10 minutes, or until the liquid has reduced and the mixture has thickened slightly. Season with salt and pepper to taste.
- Warm the tortillas according to package directions.
- Fill each tortilla with the seasoned ground beef, shredded lettuce, diced tomatoes, shredded cheese, sour cream, and salsa.
- Serve the tacos while they're warm and the filling is fresh.
