Ingredients:
- 1 cup fresh prickly pear juice (about 2-3 ripe prickly pears)
- 4 ounces silver tequila
- 2 ounces freshly squeezed lime juice
- 1 ounce agave syrup (adjust to taste)
- Ice cubes
- Lime wedges for garnish
- Prickly pear slices for garnish
Instructions:
- If using whole prickly pears, carefully peel the skin and chop the flesh. Blend until smooth, then strain using a fine mesh strainer to extract the juice.
- In a cocktail shaker, combine the prickly pear juice, tequila, lime juice, and agave syrup.
- Fill the shaker with ice cubes and shake vigorously for about 15-20 seconds until well chilled.
- Fill two glasses with ice and strain the cocktail mixture into each glass. Garnish with lime wedges and slices of prickly pear.
