Ingredients:

  • 1 ½ lbs (680g) ground beef (80/20 preferred for flavor)
  • 1 medium green bell pepper, finely diced
  • 1 medium yellow onion, finely diced
  • 1 cup (115g) shredded provolone or mozzarella cheese
  • 2 cloves garlic, minced
  • 2 large eggs
  • ½ cup (50g) breadcrumbs (panko or regular)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • 1 tbsp olive oil
  • 4-6 slices provolone or American cheese
  • Optional: Extra sautéed onions and peppers for garnish

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Heat olive oil in a small skillet over medium heat. Sauté diced bell pepper and onion until softened, about 5-7 minutes. Let cool slightly.
  3. In a large bowl, gently combine ground beef, sautéed vegetables, shredded cheese, garlic, eggs, breadcrumbs, Worcestershire sauce, salt, pepper, and oregano. Be careful not to overmix.
  4. Shape the mixture into a loaf on the prepared baking sheet or press into the loaf pan.
  5. Bake uncovered for 45-50 minutes, or until the internal temperature reaches 155°F (68°C).
  6. Top the meatloaf with slices of provolone or American cheese.
  7. Return the meatloaf to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  8. Remove from oven and let the meatloaf rest for 5-10 minutes before slicing. Garnish with extra sautéed onions and peppers, if desired.
