Ingredients:

  • 1 lb (450g) ground beef (80% lean)
  • 1 cup (100g) breadcrumbs (preferably fresh)
  • 1/2 cup (120ml) milk
  • 1/4 cup (40g) chopped onion
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/3 cup (80ml) ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, chopped onion, eggs, garlic, Worcestershire sauce, parsley, salt, pepper, and oregano.
  3. Mix until well combined; don’t overwork the meat.
  4. Shape the mixture into a loaf and place it in a loaf pan (or shape freeform on a baking sheet).
  5. In a separate bowl, whisk together ketchup, brown sugar, and apple cider vinegar for the glaze.
  6. Brush the glaze over the meatloaf.
  7. Bake in the preheated oven for about 1 hour or until the internal temperature reaches 160°F (70°C).
  8. Let the meatloaf rest for 10 minutes before slicing.
