Ingredients:
- 4 boneless, skinless chicken breasts (about 6 ounces/170g each)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika (sweet or smoked)
- 1 teaspoon dried Italian herbs (or a mix of oregano, thyme, and basil)
- ½ teaspoon salt
- ½ teaspoon black pepper
- Lemon wedges and fresh parsley for garnish (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it.
- Pat chicken breasts dry with paper towels. This is crucial for achieving a good sear.
- Brush both sides of the chicken breasts with olive oil.
- In a small bowl, combine garlic powder, paprika, Italian herbs, salt, and pepper.
- Sprinkle the seasoning mixture evenly over both sides of the chicken breasts, pressing lightly to adhere.
- Place the chicken breasts on the prepared baking sheet, ensuring they are not overcrowded. Bake for 25-30 minutes, or until an instant-read thermometer inserted into the thickest part registers 165°F (74°C).
- Remove the chicken from the oven and let it rest for 5 minutes before slicing. This allows the juices to redistribute, resulting in a more tender and flavorful result.
- Garnish with lemon wedges and fresh parsley, if desired.
