Ingredients:

  • 4 slices bread (white, sourdough, or Italian, about 100g/3.5 oz each)
  • 4 teaspoons (20ml) butter, softened, or mayonnaise
  • ½ cup (57g) shredded mozzarella cheese
  • 12-16 slices pepperoni (about 50g)
  • 2 tablespoons (30ml) pizza sauce or marinara sauce
  • ½ teaspoon (2.5ml) Italian seasoning (optional)
  • 2 tablespoons (approx 20g) grated Parmesan cheese (optional, for topping)

Instructions:

  1. Spread butter or mayonnaise evenly on one side of each slice of bread.
  2. On the unbuttered side of two bread slices, layer a thin layer of mozzarella cheese, arrange the pepperoni slices evenly, spread a spoonful of pizza sauce, sprinkle with Italian seasoning (if using), and top with the remaining mozzarella cheese.
  3. Top with the remaining bread slices, buttered (or mayo-ed!) side facing out.
  4. Heat a nonstick skillet over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes per side, pressing down gently with a spatula. Sprinkle Parmesan cheese on the outer side of each sandwich during the last minute of cooking per side (optional). Cook until the bread is golden brown and the cheese is fully melted.
  5. Remove from skillet and let cool for 1-2 minutes. Slice in half and serve immediately with warm pizza sauce or marinara for dipping.
