Ingredients:

  • 1 cup (90g) old-fashioned rolled oats
  • 1/2 cup (125g) creamy peanut butter
  • 1/3 cup (110g) honey
  • 1 tsp (5ml) vanilla extract
  • 1/3 cup (60g) mini semi-sweet chocolate chips
  • 2 tbsp (14g) ground flaxseeds
  • 1/4 tsp (1.5g) fine sea salt

Instructions:

  1. Combine the peanut butter, honey, and vanilla extract in a medium mixing bowl. Stir vigorously until the mixture is smooth.
  2. Add the rolled oats, flaxseeds, and salt. Stir until the oats are fully coated in the peanut butter mixture.
  3. Fold in the mini semi-sweet chocolate chips until evenly distributed.
  4. Scoop about 1 tablespoon of dough at a time and roll between palms into a smooth sphere.
  5. Place the balls on a parchment-lined baking sheet and refrigerate for 30 minutes to firm up.
