Ingredients:
- 1 cup (90g) old-fashioned rolled oats
- 1/2 cup (125g) creamy peanut butter
- 1/3 cup (110g) honey
- 1 tsp (5ml) vanilla extract
- 1/3 cup (60g) mini semi-sweet chocolate chips
- 2 tbsp (14g) ground flaxseeds
- 1/4 tsp (1.5g) fine sea salt
Instructions:
- Combine the peanut butter, honey, and vanilla extract in a medium mixing bowl. Stir vigorously until the mixture is smooth.
- Add the rolled oats, flaxseeds, and salt. Stir until the oats are fully coated in the peanut butter mixture.
- Fold in the mini semi-sweet chocolate chips until evenly distributed.
- Scoop about 1 tablespoon of dough at a time and roll between palms into a smooth sphere.
- Place the balls on a parchment-lined baking sheet and refrigerate for 30 minutes to firm up.
