Ingredients:
- 1 cup (90g) rolled oats (not instant)
- ½ cup (65g) peanut butter (smooth or crunchy)
- ⅓ cup (80ml) honey or maple syrup
- ¼ cup (30g) semi-sweet chocolate chunks
- ¼ cup (25g) ground flaxseed (optional)
- 1 teaspoon (5ml) vanilla extract
- Pinch of sea salt
Instructions:
- In a large mixing bowl, combine the rolled oats, chocolate chunks, flaxseed (if using), and sea salt.
- Add the peanut butter, honey, and vanilla extract to the bowl.
- Stir until all ingredients are well combined. Mixture should be slightly sticky. If too dry, add a teaspoon of water until desired consistency is achieved.
- Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up.
- Using your hands, roll the mixture into bite-sized balls (about 1 inch in diameter).
- Place the rolled bites on a cookie sheet lined with parchment paper.
- For even firmer bites, chill them for another 15-20 minutes after rolling (optional).
