Ingredients:

  • 1 cup (90g) rolled oats (not instant)
  • ½ cup (65g) peanut butter (smooth or crunchy)
  • ⅓ cup (80ml) honey or maple syrup
  • ¼ cup (30g) semi-sweet chocolate chunks
  • ¼ cup (25g) ground flaxseed (optional)
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of sea salt

Instructions:

  1. In a large mixing bowl, combine the rolled oats, chocolate chunks, flaxseed (if using), and sea salt.
  2. Add the peanut butter, honey, and vanilla extract to the bowl.
  3. Stir until all ingredients are well combined. Mixture should be slightly sticky. If too dry, add a teaspoon of water until desired consistency is achieved.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up.
  5. Using your hands, roll the mixture into bite-sized balls (about 1 inch in diameter).
  6. Place the rolled bites on a cookie sheet lined with parchment paper.
  7. For even firmer bites, chill them for another 15-20 minutes after rolling (optional).
