Ingredients:

  • 1 cup (240ml) creamy peanut butter (smooth, not chunky)
  • ½ cup (100g) packed light brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • ½ teaspoon (2.5ml) baking soda
  • ½ cup (85g) mini chocolate chips (semi-sweet or dark)
  • Optional: Pinch of salt (if using unsalted peanut butter)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, combine the peanut butter, brown sugar, granulated sugar, egg, and vanilla extract. Mix well until smooth and creamy.
  3. Add the baking soda and salt (if using) to the wet ingredients. Stir until evenly distributed.
  4. Gently fold in the mini chocolate chips until they are evenly dispersed throughout the dough.
  5. Using a small cookie scoop or a spoon, scoop out 1-inch balls of dough. Place the balls about 1 inch apart on the prepared baking sheet.
  6. Bake in the preheated oven for 8-10 minutes. The edges should be set, and the centers may still appear slightly soft.
  7. Remove the baking sheet from the oven and let the cookie bites cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
