Ingredients:
- 1 cup (240ml) creamy peanut butter (smooth, not chunky)
- ½ cup (100g) packed light brown sugar
- ¼ cup (50g) granulated sugar
- 1 large egg
- 1 teaspoon (5ml) vanilla extract
- ½ teaspoon (2.5ml) baking soda
- ½ cup (85g) mini chocolate chips (semi-sweet or dark)
- Optional: Pinch of salt (if using unsalted peanut butter)
Instructions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a medium bowl, combine the peanut butter, brown sugar, granulated sugar, egg, and vanilla extract. Mix well until smooth and creamy.
- Add the baking soda and salt (if using) to the wet ingredients. Stir until evenly distributed.
- Gently fold in the mini chocolate chips until they are evenly dispersed throughout the dough.
- Using a small cookie scoop or a spoon, scoop out 1-inch balls of dough. Place the balls about 1 inch apart on the prepared baking sheet.
- Bake in the preheated oven for 8-10 minutes. The edges should be set, and the centers may still appear slightly soft.
- Remove the baking sheet from the oven and let the cookie bites cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
