Ingredients:

  • 6 medium peaches, peeled and sliced (approx. 750g / 1.65 lbs)
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (15g) all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 cup (120g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons (85g) cold unsalted butter, cut into small cubes
  • 1/2 cup (120ml) milk
  • 2 tablespoons (30ml) milk or cream for brushing (optional)
  • 2 tablespoons coarse sugar for sprinkling (optional)

Instructions:

  1. Combine sliced peaches, sugar, flour, cinnamon, and lemon juice in a bowl. Toss gently to coat.
  2. Pour the peach mixture into the prepared baking dish, spreading evenly.
  3. In a separate bowl, whisk together flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in milk until just combined.
  4. Drop spoonfuls of the biscuit dough evenly over the peach filling. Brush with milk or cream (optional) and sprinkle with coarse sugar (optional).
  5. Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
