Ingredients:
- 6 medium peaches, peeled and sliced (approx. 750g / 1.65 lbs)
- 1/4 cup (50g) granulated sugar
- 2 tablespoons (15g) all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 cup (120g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 6 tablespoons (85g) cold unsalted butter, cut into small cubes
- 1/2 cup (120ml) milk
- 2 tablespoons (30ml) milk or cream for brushing (optional)
- 2 tablespoons coarse sugar for sprinkling (optional)
Instructions:
- Combine sliced peaches, sugar, flour, cinnamon, and lemon juice in a bowl. Toss gently to coat.
- Pour the peach mixture into the prepared baking dish, spreading evenly.
- In a separate bowl, whisk together flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in milk until just combined.
- Drop spoonfuls of the biscuit dough evenly over the peach filling. Brush with milk or cream (optional) and sprinkle with coarse sugar (optional).
- Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
