Ingredients:

  • 3 cups cooked chicken, shredded or diced
  • 2 cups cooked pasta (penne, rotini, or elbow macaroni)
  • 1 ½ cups marinara or pasta sauce
  • 1 cup sour cream or plain Greek yogurt
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese (plus extra for topping)
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat oven to 375°F (190°C/Gas Mark 5). Lightly grease the baking dish.
  2. In the large bowl, combine cooked chicken, cooked pasta, marinara sauce, sour cream or yogurt, minced garlic, Italian seasoning, salt, and pepper.
  3. Stir in the mozzarella and Parmesan cheese until everything's nicely mixed together.
  4. Pour the mixture into the prepared baking dish, spreading it evenly.
  5. Sprinkle the remaining Parmesan cheese generously over the top.
  6. Bake uncovered for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  7. Let cool for 5 minutes before serving. Garnish with fresh basil or parsley, if desired.
