Ingredients:
- 3 cups cooked chicken, shredded or diced
- 2 cups cooked pasta (penne, rotini, or elbow macaroni)
- 1 ½ cups marinara or pasta sauce
- 1 cup sour cream or plain Greek yogurt
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese (plus extra for topping)
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Fresh basil or parsley, chopped (optional, for garnish)
Instructions:
- Preheat oven to 375°F (190°C/Gas Mark 5). Lightly grease the baking dish.
- In the large bowl, combine cooked chicken, cooked pasta, marinara sauce, sour cream or yogurt, minced garlic, Italian seasoning, salt, and pepper.
- Stir in the mozzarella and Parmesan cheese until everything's nicely mixed together.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Sprinkle the remaining Parmesan cheese generously over the top.
- Bake uncovered for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
- Let cool for 5 minutes before serving. Garnish with fresh basil or parsley, if desired.
