Ingredients:

  • 6 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 6 tablespoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons fine sea salt
  • 1.5 cups whole milk
  • 3 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions:

  1. In a very large bowl, sift the all-purpose flour to remove clumps. Add the granulated sugar, baking powder, baking soda, and fine sea salt.
  2. Whisk the dry ingredients for at least 60 seconds to ensure even distribution of the leavening agents. Transfer to an airtight container for storage.
  3. To prepare a batch, scoop 2 cups of the dry mix into a mixing bowl.
  4. In a separate jug, whisk together the whole milk, melted unsalted butter, egg, and vanilla extract.
  5. Pour the wet ingredients into the dry mix and whisk until just combined; do not overmix, as small lumps are acceptable for a fluffy texture.
  6. Heat a non-stick griddle over medium heat. Pour 1/4 cup of batter per pancake. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
