Ingredients:
- 1 medium green cabbage
- 3 tablespoons (45 ml) olive oil
- 3-4 cloves garlic, minced (or 1 ½ teaspoons garlic powder)
- 1 teaspoon (6g) salt
- ½ teaspoon (1g) freshly ground black pepper
- ½ teaspoon (1g) smoked paprika (optional)
- 2 tablespoons chopped fresh parsley or thyme (optional, for garnish)
- 1 tablespoon fresh lemon juice (optional, for finishing)
Instructions:
- Preheat oven to 400°F (200°C). Line baking sheet with parchment paper or foil.
- Remove any damaged outer leaves. Cut cabbage into ¾- to 1-inch thick steaks from top to bottom, keeping the core intact for stability.
- In a small bowl, combine olive oil, minced garlic (or garlic powder), salt, pepper, and smoked paprika (if using). Mix well.
- Place cabbage steaks on the prepared baking sheet in a single layer. Brush each steak generously with the garlic oil mixture on both sides.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through. Cook until cabbage is tender in the centre and golden brown with crispy edges.
- Remove from oven. Garnish with chopped fresh herbs (parsley or thyme) and a squeeze of lemon juice (if desired). Serve warm.
