Ingredients:
- 1 cup granulated sugar
- 1/2 cup water
- 1/4 cup corn syrup
- 2 cups unsalted roasted peanuts
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 2 tablespoons unsalted butter
Instructions:
- Prepare your baking sheet: Line it with parchment paper and set aside.
- In a heavy-bottomed saucepan, combine the sugar, water, and corn syrup.
- Over medium heat, stir until the sugar dissolves. Then, stop stirring and attach a candy thermometer.
- Watch closely: Cook until the mixture reaches 300°F (hard crack stage).
- Once at temperature, remove from heat and quickly stir in the peanuts and salt.
- Add the vanilla and baking soda, stirring until well combined. The mixture will bubble up.
- Quickly pour onto the prepared baking sheet, using a spatula to spread the brittle evenly.
- Allow to cool completely before breaking into pieces.
