Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup water
  • 1/4 cup corn syrup
  • 2 cups unsalted roasted peanuts
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 2 tablespoons unsalted butter

Instructions:

  1. Prepare your baking sheet: Line it with parchment paper and set aside.
  2. In a heavy-bottomed saucepan, combine the sugar, water, and corn syrup.
  3. Over medium heat, stir until the sugar dissolves. Then, stop stirring and attach a candy thermometer.
  4. Watch closely: Cook until the mixture reaches 300°F (hard crack stage).
  5. Once at temperature, remove from heat and quickly stir in the peanuts and salt.
  6. Add the vanilla and baking soda, stirring until well combined. The mixture will bubble up.
  7. Quickly pour onto the prepared baking sheet, using a spatula to spread the brittle evenly.
  8. Allow to cool completely before breaking into pieces.
