Ingredients:

  • 1 cup (226g) unsalted butter, melted and slightly cooled
  • 1.5 cups (300g) packed dark brown sugar
  • 0.25 cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 2 cups (180g) old-fashioned rolled oats
  • 1 teaspoon baking soda
  • 0.75 teaspoon fine sea salt
  • 0.5 teaspoon ground cinnamon
  • 1.5 cups (255g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch metal baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large mixing bowl, whisk together the melted butter, dark brown sugar, and granulated sugar until the mixture is smooth and no lumps remain.
  3. Add the eggs and vanilla extract. Whisk vigorously for about 1 minute until the batter appears glossy and slightly thickened.
  4. Using a rubber spatula, fold in the all-purpose flour, baking soda, sea salt, and cinnamon until just a few streaks of flour remain. Do not overmix.
  5. Fold in the old-fashioned rolled oats and the semi-sweet chocolate chips until evenly distributed.
  6. Transfer the dough to the prepared pan and spread it into an even layer. Bake for 25 minutes, or until the edges are set and golden brown but the center still has a slight jiggle.
  7. Remove from the oven and allow the bars to cool completely in the pan to allow carryover cooking to set the center before slicing into 16 bars.
