Ingredients:
- 1 cup (240g) natural peanut butter, creamy or chunky
- ½ cup (170g) honey or maple syrup
- 2 cups (180g) old-fashioned rolled oats
- ½ cup (85g) mini chocolate chips (optional)
- 1 teaspoon (5ml) vanilla extract
- ¼ teaspoon (1.5g) salt
Instructions:
- In a large bowl, stir together the peanut butter, honey (or maple syrup), and vanilla extract until smooth and well combined.
- Add the rolled oats, salt, and chocolate chips (if using) to the wet ingredients. Stir until all ingredients are evenly coated.
- Line a 12-cup muffin tin with muffin liners. Spoon the mixture into each liner, filling them almost to the top.
- Use the back of a spoon or your fingers to firmly press the mixture down into each cup, ensuring they are well compacted.
- Place the muffin tin in the refrigerator and chill for at least 30 minutes, or until the cups are firm and set.
- Remove the oat cups from the muffin tin. Serve immediately and enjoy! Store any leftovers in an airtight container in the refrigerator for up to a week.
