Ingredients:

  • 1 cup (240g) natural peanut butter, creamy or chunky
  • ½ cup (170g) honey or maple syrup
  • 2 cups (180g) old-fashioned rolled oats
  • ½ cup (85g) mini chocolate chips (optional)
  • 1 teaspoon (5ml) vanilla extract
  • ¼ teaspoon (1.5g) salt

Instructions:

  1. In a large bowl, stir together the peanut butter, honey (or maple syrup), and vanilla extract until smooth and well combined.
  2. Add the rolled oats, salt, and chocolate chips (if using) to the wet ingredients. Stir until all ingredients are evenly coated.
  3. Line a 12-cup muffin tin with muffin liners. Spoon the mixture into each liner, filling them almost to the top.
  4. Use the back of a spoon or your fingers to firmly press the mixture down into each cup, ensuring they are well compacted.
  5. Place the muffin tin in the refrigerator and chill for at least 30 minutes, or until the cups are firm and set.
  6. Remove the oat cups from the muffin tin. Serve immediately and enjoy! Store any leftovers in an airtight container in the refrigerator for up to a week.
