Ingredients:
- 4 cups (600g) fresh blackberries
- 2 cups (400g) granulated sugar
- 2 tbsp (30ml) fresh lemon juice
Instructions:
- Rinse the blackberries thoroughly and pat them dry.
- Place berries in a large heavy-bottomed pot and use a potato masher or the back of a large spoon to lightly crush about half of the berries.
- Add the granulated sugar and fresh lemon juice to the pot.
- Stir over medium heat until the sugar completely dissolves.
- Increase the heat to medium-high and bring the mixture to a rolling boil, stirring frequently to prevent scorching.
- Simmer for 15–20 minutes, stirring often, until the liquid reduces and the jam looks glossy and thick.
- Perform the Plate Test: Spoon a small amount of jam onto a chilled plate and place it in the freezer for 1 minute. If the jam wrinkles when pushed with a finger, it has reached the gel stage.
- Remove from heat immediately and transfer to glass canning jars.
