Ingredients:
- 4 tablespoons (60 ml) olive oil, extra virgin
- 2 tablespoons (30 ml) lemon juice, freshly squeezed
- 2 cloves garlic, minced (approx. 2 teaspoons)
- 1 tablespoon (15 ml) fresh rosemary, chopped
- 1 tablespoon (15 ml) fresh thyme, chopped
- 1 teaspoon (5 ml) dried oregano
- 1/2 teaspoon (2.5 ml) salt
- 1/4 teaspoon (1.25 ml) black pepper, freshly ground
- 4 bone-in, skin-on chicken thighs (about 6-8 ounces/ 170-227g each)
Instructions:
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, rosemary, thyme, oregano, salt, and pepper. Whisk well to combine.
- Place chicken thighs in the bowl with the marinade. Toss to coat thoroughly, ensuring the marinade gets under the skin. Cover and refrigerate for at least 30 minutes (or up to overnight for maximum flavor).
- Preheat the Ninja Air Fryer to 400°F (200°C) for 3 minutes.
- Place chicken thighs skin-side up in the air fryer basket in a single layer, ensuring they are not overcrowded.
- Air fry for 18-22 minutes, or until the skin is crispy and golden brown and the internal temperature reaches 165°F (74°C) using a meat thermometer. (Flipping halfway through is optional, but encourages even crisping.)
- Remove the chicken from the air fryer and let it rest for 5 minutes before serving.
