Ingredients:

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 3 tablespoons (45 ml) extra virgin olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Juice of 1 lemon (about 2 tablespoons or 30 ml)
  • Zest of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup (15 g) fresh parsley, finely chopped
  • Cooked pasta of choice (spaghetti or linguine recommended)
  • Additional lemon slices and parsley for garnish

Instructions:

  1. Prepare the pasta according to package instructions. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes. Sauté until fragrant, about 1 minute.
  4. Add the shrimp to the skillet, seasoning with salt and black pepper. Cook until they turn pink and opaque, about 3-4 minutes.
  5. Stir in the lemon juice and zest, cooking for an additional 1-2 minutes.
  6. Toss the cooked pasta with the shrimp mixture, ensuring even coating.
  7. Remove from heat and sprinkle with fresh parsley before serving.
  8. Garnish with additional lemon slices and parsley as desired.
