Ingredients:
- 1 lb (450 g) large shrimp, peeled and deveined
- 3 tablespoons (45 ml) extra virgin olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Juice of 1 lemon (about 2 tablespoons or 30 ml)
- Zest of 1 lemon
- Salt and freshly ground black pepper, to taste
- 1/4 cup (15 g) fresh parsley, finely chopped
- Cooked pasta of choice (spaghetti or linguine recommended)
- Additional lemon slices and parsley for garnish
Instructions:
- Prepare the pasta according to package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and red pepper flakes. Sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet, seasoning with salt and black pepper. Cook until they turn pink and opaque, about 3-4 minutes.
- Stir in the lemon juice and zest, cooking for an additional 1-2 minutes.
- Toss the cooked pasta with the shrimp mixture, ensuring even coating.
- Remove from heat and sprinkle with fresh parsley before serving.
- Garnish with additional lemon slices and parsley as desired.
