Ingredients:

  • 1.5 lbs (680g) ground beef (80/20 blend for flavour)
  • 1 medium yellow onion, finely diced (approximately 1 cup or 150g)
  • 2 cloves garlic, minced (approximately 1 tsp or 5g)
  • 1 cup (120g) breadcrumbs (panko or regular)
  • ½ cup (120ml) milk (whole or 2%)
  • 1 large egg, lightly beaten
  • 2 tablespoons Worcestershire sauce (30ml)
  • 1 teaspoon dried thyme (2g)
  • ½ teaspoon salt (3g)
  • ¼ teaspoon black pepper (0.5g)
  • ½ cup (120ml) ketchup
  • 2 tablespoons brown sugar (packed, approximately 30g)
  • 1 tablespoon yellow mustard (15ml)
  • 1 teaspoon Worcestershire sauce (5ml)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, gently combine ground beef, diced onion, minced garlic, breadcrumbs, milk, beaten egg, Worcestershire sauce, dried thyme, salt, and pepper. Don't overmix! Overmixing leads to tough meatloaf.
  3. Transfer the mixture to the loaf pan and gently press it into an even loaf shape.
  4. In a small bowl, whisk together ketchup, brown sugar, yellow mustard, and Worcestershire sauce.
  5. Spread half of the glaze evenly over the top of the meatloaf.
  6. Bake for 45 minutes.
  7. Remove from the oven and spread the remaining glaze over the top.
  8. Return to the oven and bake for another 15 minutes, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer to ensure it's fully cooked.
  9. Let the meatloaf rest for 10 minutes before slicing and serving. This allows the juices to redistribute, resulting in a more tender meatloaf.
