Ingredients:
- 1.5 lbs (680g) ground beef (80/20 blend for flavour)
- 1 medium yellow onion, finely diced (approximately 1 cup or 150g)
- 2 cloves garlic, minced (approximately 1 tsp or 5g)
- 1 cup (120g) breadcrumbs (panko or regular)
- ½ cup (120ml) milk (whole or 2%)
- 1 large egg, lightly beaten
- 2 tablespoons Worcestershire sauce (30ml)
- 1 teaspoon dried thyme (2g)
- ½ teaspoon salt (3g)
- ¼ teaspoon black pepper (0.5g)
- ½ cup (120ml) ketchup
- 2 tablespoons brown sugar (packed, approximately 30g)
- 1 tablespoon yellow mustard (15ml)
- 1 teaspoon Worcestershire sauce (5ml)
Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, gently combine ground beef, diced onion, minced garlic, breadcrumbs, milk, beaten egg, Worcestershire sauce, dried thyme, salt, and pepper. Don't overmix! Overmixing leads to tough meatloaf.
- Transfer the mixture to the loaf pan and gently press it into an even loaf shape.
- In a small bowl, whisk together ketchup, brown sugar, yellow mustard, and Worcestershire sauce.
- Spread half of the glaze evenly over the top of the meatloaf.
- Bake for 45 minutes.
- Remove from the oven and spread the remaining glaze over the top.
- Return to the oven and bake for another 15 minutes, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer to ensure it's fully cooked.
- Let the meatloaf rest for 10 minutes before slicing and serving. This allows the juices to redistribute, resulting in a more tender meatloaf.
