Ingredients:

  • 315g all-purpose flour
  • 7g baking soda
  • 8g ground ginger
  • 4g ground cinnamon
  • 1g ground cloves
  • 3g salt
  • 113g unsalted butter, melted
  • 150g brown sugar, packed
  • 340g unsulfured molasses
  • 1 large egg, room temperature
  • 240ml boiling water

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x9-inch square baking pan and line the bottom with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a large mixing bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt until well combined and free of clumps.
  3. Make a well in the center of the dry ingredients. Add the melted butter, molasses, packed brown sugar, and egg.
  4. Whisk the wet ingredients into the dry ingredients starting from the center and moving outward until just incorporated.
  5. Slowly pour the boiling water into the batter, whisking steadily until the mixture is smooth and the spices have bloomed.
  6. Pour the batter into the prepared baking pan and bake for 35 minutes, or until a toothpick inserted into the center comes out clean. Cool on a wire rack before slicing.
