Ingredients:
- 315g all-purpose flour
- 7g baking soda
- 8g ground ginger
- 4g ground cinnamon
- 1g ground cloves
- 3g salt
- 113g unsalted butter, melted
- 150g brown sugar, packed
- 340g unsulfured molasses
- 1 large egg, room temperature
- 240ml boiling water
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x9-inch square baking pan and line the bottom with parchment paper, leaving an overhang on two sides for easy removal.
- In a large mixing bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt until well combined and free of clumps.
- Make a well in the center of the dry ingredients. Add the melted butter, molasses, packed brown sugar, and egg.
- Whisk the wet ingredients into the dry ingredients starting from the center and moving outward until just incorporated.
- Slowly pour the boiling water into the batter, whisking steadily until the mixture is smooth and the spices have bloomed.
- Pour the batter into the prepared baking pan and bake for 35 minutes, or until a toothpick inserted into the center comes out clean. Cool on a wire rack before slicing.
