Ingredients:

  • 3 large overripe bananas, mashed (approx. 1 ½ cups / 340g)
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • ¾ cup (150g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 tsp (5g) baking soda
  • ¼ tsp (1.5g) salt
  • 1 ½ cups (190g) all-purpose flour
  • ½ tsp (2.5g) ground cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mash the bananas with a fork until mostly smooth but with a few small lumps for texture.
  3. Stir in the melted butter, brown sugar, egg, and vanilla extract until the mixture is velvety and well-combined.
  4. Sift in the baking soda, salt, cinnamon, and flour.
  5. Using a spatula, gently fold the dry ingredients into the wet ingredients until no streaks of white flour remain.
  6. Fold in optional chocolate chips or nuts at this stage if desired.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60–65 minutes until the edges are deep golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
