Ingredients:
- 3 large overripe bananas, mashed (approx. 1 ½ cups / 340g)
- ½ cup (115g) unsalted butter, melted and slightly cooled
- ¾ cup (150g) light brown sugar, packed
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 tsp (5g) baking soda
- ¼ tsp (1.5g) salt
- 1 ½ cups (190g) all-purpose flour
- ½ tsp (2.5g) ground cinnamon
Instructions:
- Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, mash the bananas with a fork until mostly smooth but with a few small lumps for texture.
- Stir in the melted butter, brown sugar, egg, and vanilla extract until the mixture is velvety and well-combined.
- Sift in the baking soda, salt, cinnamon, and flour.
- Using a spatula, gently fold the dry ingredients into the wet ingredients until no streaks of white flour remain.
- Fold in optional chocolate chips or nuts at this stage if desired.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60–65 minutes until the edges are deep golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
