Ingredients:

  • 3 large overripe bananas, mashed (approx. 350g)
  • 0.5 cup neutral vegetable oil (108g)
  • 0.5 cup light brown sugar, packed (100g)
  • 0.25 cup granulated sugar (50g)
  • 1 large egg, room temperature (50g)
  • 0.33 cup full-fat Greek yogurt (80g)
  • 2 tsp pure vanilla extract (8g)
  • 1.5 cups all-purpose flour (190g)
  • 0.5 cup unsweetened Dutch-process cocoa powder (45g)
  • 1 tsp baking soda (6g)
  • 0.5 tsp sea salt (3g)
  • 1 cup semi-sweet chocolate chips (170g)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line with parchment paper.
  2. In a large mixing bowl, mash the overripe bananas until smooth. Whisk in the neutral oil, brown sugar, granulated sugar, egg, Greek yogurt, and vanilla extract for approximately one minute until the mixture is emulsified.
  3. Sift the all-purpose flour, cocoa powder, baking soda, and salt directly into the wet ingredients.
  4. Using a silicone spatula, gently fold the dry ingredients into the wet base until just combined, ensuring no flour streaks remain. Do not overmix.
  5. Fold in 3/4 of the chocolate chips into the batter.
  6. Pour the batter into the prepared loaf pan and sprinkle the remaining chocolate chips on top.
  7. Bake for 55-65 minutes, until a toothpick comes out with just a few moist crumbs (not wet batter).
  8. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
