- 1.5 cups all-purpose flour
- 0.5 cup old-fashioned rolled oats

- 1 cup unsweetened applesauce
- 0.75 cup coconut sugar or brown sugar
- 2 large eggs
- 0.25 cup melted coconut oil or avocado oil
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
- In a large mixing bowl, whisk together the unsweetened applesauce, sugar, eggs, oil, and vanilla extract for 60 seconds until the mixture is glossy and fully emulsified.
- Add the all-purpose flour, rolled oats, baking soda, salt, cinnamon, and nutmeg directly into the wet mixture.
- Using a silicone spatula, gently fold the dry ingredients into the wet until no streaks of flour remain, being careful not to overmix.
- Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
