Ingredients:

  • 1.5 cups all-purpose flour
  • 0.5 cup old-fashioned rolled oats
  • 1 tsp baking soda
  • 0.5 tsp fine sea salt
  • 2 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 1 cup unsweetened applesauce
  • 0.75 cup coconut sugar or brown sugar
  • 2 large eggs
  • 0.25 cup melted coconut oil or avocado oil
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large mixing bowl, whisk together the unsweetened applesauce, sugar, eggs, oil, and vanilla extract for 60 seconds until the mixture is glossy and fully emulsified.
  3. Add the all-purpose flour, rolled oats, baking soda, salt, cinnamon, and nutmeg directly into the wet mixture.
  4. Using a silicone spatula, gently fold the dry ingredients into the wet until no streaks of flour remain, being careful not to overmix.
  5. Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
