Ingredients:
- 4 cups mixed salad greens (e.g., arugula, spinach, romaine)
- 1 cup cherry tomatoes, halved
- ½ cup cucumber, diced
- ½ cup cooked chickpeas, drained
- ½ cup crumbled feta cheese
- ½ cup shelled pistachios, roughly chopped
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey (optional)
- Salt and pepper to taste
Instructions:
- Wash and dry the salad greens thoroughly.
- Halve the cherry tomatoes and dice the cucumber.
- Drain and rinse the chickpeas if using canned.
- In a large mixing bowl, add the salad greens, cherry tomatoes, cucumber, chickpeas, crumbled feta, and chopped pistachios. Gently toss to combine.
- In a small bowl or jar, whisk together olive oil, lemon juice, honey (if using), salt, and pepper until well combined.
