Ingredients:
- 1 pound fresh strawberries, washed and dried (approx. 450g)
- 4 ounces cream cheese, softened (115g)
- 2 tablespoons powdered sugar (25g)
- 1/2 teaspoon vanilla extract
- 24 mini semi-sweet chocolate chips
- Optional: Sprinkles
Instructions:
- Wash and thoroughly dry the strawberries. Cut off the stem end to create a flat base. Cut the tip off the pointed end – this will be the Santa's hat.
- In a small mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, and mix until well combined and creamy.
- Transfer the cream cheese mixture to a piping bag. Pipe a generous swirl of cream cheese onto the flat base of each strawberry body.
- Place the strawberry tip (the 'hat') on top of the cream cheese 'beard.'
- Dab a tiny bit of cream cheese on the top of the hat and affix a mini chocolate chip (pointy side up) to resemble a bobble.
- For best results, chill the finished Mini Strawberry Santas for about 10 minutes to allow the cream cheese to firm up slightly.
