Ingredients:

  • 1 pound fresh strawberries, washed and dried (approx. 450g)
  • 4 ounces cream cheese, softened (115g)
  • 2 tablespoons powdered sugar (25g)
  • 1/2 teaspoon vanilla extract
  • 24 mini semi-sweet chocolate chips
  • Optional: Sprinkles

Instructions:

  1. Wash and thoroughly dry the strawberries. Cut off the stem end to create a flat base. Cut the tip off the pointed end – this will be the Santa's hat.
  2. In a small mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, and mix until well combined and creamy.
  3. Transfer the cream cheese mixture to a piping bag. Pipe a generous swirl of cream cheese onto the flat base of each strawberry body.
  4. Place the strawberry tip (the 'hat') on top of the cream cheese 'beard.'
  5. Dab a tiny bit of cream cheese on the top of the hat and affix a mini chocolate chip (pointy side up) to resemble a bobble.
  6. For best results, chill the finished Mini Strawberry Santas for about 10 minutes to allow the cream cheese to firm up slightly.
  7. Serve and Enjoy!
