Ingredients:

  • 4 cups shredded cabbage mix (green and red cabbage)
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup red onion, finely diced
  • 1 medium carrot, shredded
  • 1/3 cup mayonnaise
  • 3 tbsp fresh lime juice
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1/2 tsp ground cumin
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions:

  1. Combine the shredded cabbage, diced red onion, and shredded carrots in a large bowl. Toss in the chopped cilantro last.
  2. In a separate small bowl, whisk together the mayonnaise, lime juice, vinegar, honey, cumin, salt, and pepper until the mixture is smooth.
  3. Pour the dressing over the cabbage mixture and fold gently with tongs or spoons until every strand is thinly coated.
  4. Let the slaw sit for 5 minutes before serving to allow the flavors to penetrate the cabbage.
