Ingredients:

  • 1 pre-made pizza dough (approx. 340g/12 oz, about 30cm/12-inch size)
  • 2 tablespoons extra virgin olive oil (30 ml)
  • 2 cloves garlic, minced (approx. 6g)
  • 1 cup cooked chicken breast, shredded or diced (approx. 150g/5.3 oz)
  • ½ cup crumbled feta cheese (approx. 60g/2.1 oz)
  • ½ cup sliced Kalamata olives (approx. 75g/2.6 oz), pitted
  • ½ cup cherry tomatoes, halved (approx. 75g/2.6 oz)
  • ½ small red onion, thinly sliced (approx. 50g/1.8 oz)
  • 1 cup shredded mozzarella cheese (approx. 100g/3.5oz)
  • 1 teaspoon dried oregano (2g)
  • Fresh spinach or arugula (optional, for topping after baking, approx. 50g/1.8 oz)
  • Fresh basil leaves (optional, for topping after baking, approx. 15g/0.5 oz)

Instructions:

  1. Preheat oven to 475°F (245°C). Place pizza stone or baking sheet in the oven while preheating.
  2. Roll out the pizza dough on a lightly floured surface to a 12-inch circle (or desired shape/size).
  3. In a small bowl, combine olive oil and minced garlic.
  4. Brush the garlic-herb oil evenly over the pizza crust.
  5. Spread shredded chicken evenly over the crust, then sprinkle mozzarella cheese on top.
  6. Distribute feta, Kalamata olives, cherry tomatoes, and red onion slices evenly over the mozzarella. Sprinkle with dried oregano.
  7. Carefully transfer the pizza to the preheated pizza stone or baking sheet. Bake for 12–15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  8. Remove from the oven and top with fresh spinach or arugula and basil leaves (if using).
  9. Slice and serve immediately.
