Ingredients:
- 1 pre-made pizza dough (approx. 340g/12 oz, about 30cm/12-inch size)
- 2 tablespoons extra virgin olive oil (30 ml)
- 2 cloves garlic, minced (approx. 6g)
- 1 cup cooked chicken breast, shredded or diced (approx. 150g/5.3 oz)
- ½ cup crumbled feta cheese (approx. 60g/2.1 oz)
- ½ cup sliced Kalamata olives (approx. 75g/2.6 oz), pitted
- ½ cup cherry tomatoes, halved (approx. 75g/2.6 oz)
- ½ small red onion, thinly sliced (approx. 50g/1.8 oz)
- 1 cup shredded mozzarella cheese (approx. 100g/3.5oz)
- 1 teaspoon dried oregano (2g)
- Fresh spinach or arugula (optional, for topping after baking, approx. 50g/1.8 oz)
- Fresh basil leaves (optional, for topping after baking, approx. 15g/0.5 oz)
Instructions:
- Preheat oven to 475°F (245°C). Place pizza stone or baking sheet in the oven while preheating.
- Roll out the pizza dough on a lightly floured surface to a 12-inch circle (or desired shape/size).
- In a small bowl, combine olive oil and minced garlic.
- Brush the garlic-herb oil evenly over the pizza crust.
- Spread shredded chicken evenly over the crust, then sprinkle mozzarella cheese on top.
- Distribute feta, Kalamata olives, cherry tomatoes, and red onion slices evenly over the mozzarella. Sprinkle with dried oregano.
- Carefully transfer the pizza to the preheated pizza stone or baking sheet. Bake for 12–15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
- Remove from the oven and top with fresh spinach or arugula and basil leaves (if using).
- Slice and serve immediately.
