Ingredients:

  • 2 lbs Top Sirloin Steak, cut into 1-inch cubes
  • 2 tbsp Avocado or Grapeseed oil
  • 1 tsp Coarse Kosher salt
  • 1/2 tsp Cracked black pepper
  • 4 tbsp Unsalted grass-fed butter
  • 6 cloves Garlic, smashed and minced
  • 1 tbsp Fresh rosemary, finely chopped
  • 1 tbsp Fresh thyme leaves
  • 1 tbsp Fresh Italian parsley, chopped
  • 1 tsp Flaky sea salt
  • 1/2 tsp Red pepper flakes

Instructions:

  1. Pat the steak cubes completely dry with paper towels to ensure a proper sear. In a large bowl, toss the cubes with the high-smoke point oil, kosher salt, and black pepper until evenly coated. Let them sit at room temperature for 10 minutes.
  2. Heat a large cast iron skillet over medium-high heat until it just begins to smoke. Working in batches to avoid crowding, add the steak cubes in a single layer. Sear for 2 minutes without moving them, then flip and sear for another 1–2 minutes until a deep brown crust forms.
  3. Reduce the heat to medium. Add the butter, minced garlic, rosemary, and thyme to the center of the pan. As the butter melts and foams, spoon the mixture over the steak bites continuously for 60 seconds until the garlic is golden and fragrant.
  4. Remove the bites from the pan immediately and transfer to a warm serving platter. Pour the remaining garlic herb butter over the top and let rest for 5 minutes. Garnish with fresh parsley, flaky sea salt, and optional red pepper flakes.
