Ingredients:

  • 1 cup (226g) unsalted butter, melted
  • 1 cup (200g) packed light brown sugar
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (170g) butterscotch chips
  • 1 cup (85g) shredded sweetened coconut
  • 1 cup (115g) chopped nuts (walnuts, pecans)
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. In a large bowl, combine melted butter, brown sugar, and granulated sugar. Mix until well combined and smooth.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Gently fold in the butterscotch chips, coconut, nuts (if using), and chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving some space between each cookie.
  8. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
