Ingredients:

  • 4 medium zucchinis, sliced into ¼-inch rounds (about 680g)
  • 1 tablespoon olive oil (15ml)
  • 1 teaspoon sea salt (5g)
  • ½ teaspoon freshly ground black pepper (2g)
  • Juice of 1 lemon (about 30ml)
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped (8g)
  • 1 teaspoon fresh thyme leaves (2g)

Instructions:

  1. Wash the zucchinis thoroughly. Slice them into ¼-inch rounds.
  2. Fill a pot with about an inch of water and bring it to a gentle simmer. Place the steamer basket inside.
  3. In a mixing bowl, combine the sliced zucchini, olive oil, sea salt, and black pepper; toss to coat evenly.
  4. Place the seasoned zucchini in the steamer basket. Cover the pot with a lid and steam for 5-7 minutes, or until tender yet slightly crisp.
  5. Transfer the steamed zucchini to a serving bowl. Drizzle with lemon juice and sprinkle with lemon zest, parsley, and thyme. Toss gently to combine.
  6. Present immediately as a lovely side dish.
