- 2 cups sweet potatoes, roasted and mashed

- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon vanilla extract
- ½ teaspoon salt
- 3 large eggs
- 1 cup evaporated milk
Instructions:
- In a mixing bowl, combine flour and salt.
- Add chilled butter; mix until crumbly.
- Gradually add ice water, mixing until dough forms.
- Wrap in plastic and chill for at least 30 minutes.
- Roast sweet potatoes until tender, then peel and mash.
- In a large bowl, combine mashed sweet potatoes, sugars, spices, vanilla, and salt.
- Beat in eggs until well incorporated.
- Stir in evaporated milk until smooth.
- Preheat your oven to 350°F (175°C).
- Roll out the chilled dough and fit it into the pie dish.
- Pour sweet potato filling into the crust, smoothing the top.
- Bake in preheated oven for about 50-60 minutes or until the filling is set.
- Allow pie to cool at room temperature before serving.
