  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon vanilla extract
  • ½ teaspoon salt
  • 3 large eggs
  • 1 cup evaporated milk

Instructions:

  1. In a mixing bowl, combine flour and salt.
  2. Add chilled butter; mix until crumbly.
  3. Gradually add ice water, mixing until dough forms.
  4. Wrap in plastic and chill for at least 30 minutes.
  5. Roast sweet potatoes until tender, then peel and mash.
  6. In a large bowl, combine mashed sweet potatoes, sugars, spices, vanilla, and salt.
  7. Beat in eggs until well incorporated.
  8. Stir in evaporated milk until smooth.
  9. Preheat your oven to 350°F (175°C).
  10. Roll out the chilled dough and fit it into the pie dish.
  11. Pour sweet potato filling into the crust, smoothing the top.
  12. Bake in preheated oven for about 50-60 minutes or until the filling is set.
  13. Allow pie to cool at room temperature before serving.
