- 2 large eggs
- 1 1/2 cups milk (360ml)
- 2 tablespoons unsalted butter, melted (30g)
- 1/4 teaspoon salt
- 1 tablespoon sugar (optional, for sweet crêpes)
- 1 cup mixed berries (fresh or frozen, for filling)
- 1 cup cooked ham, diced (for savory filling)
- 1 cup shredded cheese (for savory filling)
- Whipped cream (for serving sweet crêpes)
- Crème fraîche (for serving sweet crêpes)
Instructions:
- In a mixing bowl, whisk together flour, eggs, and salt.
- Gradually pour in the milk while whisking to avoid lumps.
- Add melted butter and, if desired, sugar. Mix until smooth.
- Cover and chill for 30 minutes.
- Heat a non-stick skillet over medium heat. Lightly grease if necessary.
- Pour a small amount of batter (about 1/4 cup) into the skillet, swirling to coat evenly.
- Cook until the edges lift and the bottom is golden (about 1-2 minutes).
- Flip using a spatula and cook for another minute.
- Transfer to a plate and repeat with remaining batter.
- For sweet crêpes, fill with berries and whipped cream.
- For savory crêpes, add ham and cheese, fold and heat briefly.
- Serve warm.
