Ingredients:
- ¼ cup (60 ml) olive oil
- 2 large lemons (juice and zest)
- 4 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh thyme leaves
- Salt and freshly ground black pepper, to taste
- 4 rockfish fillets (about 6 ounces each)
- Lemon slices, for garnish
- Fresh herbs, for garnish
Instructions:
- In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, parsley, dill, thyme, salt, and pepper.
- Place the rockfish fillets in a shallow dish. Pour the marinade over the fish, ensuring it's well-coated. Let it marinate for at least 15 minutes (or up to 1 hour in the fridge).
- Preheat your oven to 400°F (200°C).
- Arrange the marinated fillets on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the fish flakes easily with a fork and is opaque.
- Garnish with lemon slices and fresh herbs before serving.
