Ingredients:

  • ¼ cup (60 ml) olive oil
  • 2 large lemons (juice and zest)
  • 4 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh thyme leaves
  • Salt and freshly ground black pepper, to taste
  • 4 rockfish fillets (about 6 ounces each)
  • Lemon slices, for garnish
  • Fresh herbs, for garnish

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, parsley, dill, thyme, salt, and pepper.
  2. Place the rockfish fillets in a shallow dish. Pour the marinade over the fish, ensuring it's well-coated. Let it marinate for at least 15 minutes (or up to 1 hour in the fridge).
  3. Preheat your oven to 400°F (200°C).
  4. Arrange the marinated fillets on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the fish flakes easily with a fork and is opaque.
  5. Garnish with lemon slices and fresh herbs before serving.
