Ingredients:

  • 1/2 cup extra virgin olive oil
  • 1/3 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 4 cloves garlic, minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 2 lbs boneless, skinless chicken breasts

Instructions:

  1. In a medium bowl, whisk together the olive oil, lemon juice, zest, minced garlic, salt, pepper, and oregano until emulsified and creamy.
  2. Place the chicken in a Ziploc bag or airtight container and pour the marinade over the top. Massage the bag to ensure the meat is evenly coated.
  3. Seal and refrigerate to marinate for at least 30 minutes, or up to 24 hours for maximum flavor.
  4. Heat a heavy-bottomed skillet or grill pan over medium-high heat.
  5. Remove chicken from the marinade, letting excess drip off, and sear for 6–8 minutes per side until a deep mahogany crust forms and the internal temperature reaches 165°F (74°C).
