Ingredients:
- 1/2 cup extra virgin olive oil
- 1/3 cup fresh lemon juice
- 1 tbsp lemon zest
- 4 cloves garlic, minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 2 lbs boneless, skinless chicken breasts
Instructions:
- In a medium bowl, whisk together the olive oil, lemon juice, zest, minced garlic, salt, pepper, and oregano until emulsified and creamy.
- Place the chicken in a Ziploc bag or airtight container and pour the marinade over the top. Massage the bag to ensure the meat is evenly coated.
- Seal and refrigerate to marinate for at least 30 minutes, or up to 24 hours for maximum flavor.
- Heat a heavy-bottomed skillet or grill pan over medium-high heat.
- Remove chicken from the marinade, letting excess drip off, and sear for 6–8 minutes per side until a deep mahogany crust forms and the internal temperature reaches 165°F (74°C).
