Ingredients:

  • 4 large flour tortillas
  • 1 1/2 cups cooked turkey, shredded or diced
  • 1 1/2 cups shredded cheese (Cheddar, Monterey Jack, Mexican blend, or Gruyere)
  • 1/4 cup diced onion (optional)
  • 1/4 cup diced bell pepper (optional)
  • 1 tablespoon butter or oil
  • Optional: Sliced jalapeños, canned corn, black beans, your favorite salsa

Instructions:

  1. If using onion and bell pepper, sauté them in a skillet with a bit of oil until softened (about 3 minutes). Set aside.
  2. Place one tortilla on a clean surface. Spread half the cheese evenly over one half of the tortilla.
  3. Top the cheese with half the turkey, sautéed veggies (if using), and any optional add-ins.
  4. Sprinkle with the remaining cheese.
  5. Fold the tortilla in half, covering the filling.
  6. Heat butter or oil in a large skillet over medium heat.
  7. Carefully place the folded quesadilla in the pan. Cook for 3-4 minutes per side, or until golden brown and the cheese is fully melted and gooey.
  8. Remove from heat, let cool slightly, and cut into wedges. Serve immediately.
