Ingredients:
- 4 large flour tortillas
- 1 1/2 cups cooked turkey, shredded or diced
- 1 1/2 cups shredded cheese (Cheddar, Monterey Jack, Mexican blend, or Gruyere)
- 1/4 cup diced onion (optional)
- 1/4 cup diced bell pepper (optional)
- 1 tablespoon butter or oil
- Optional: Sliced jalapeños, canned corn, black beans, your favorite salsa
Instructions:
- If using onion and bell pepper, sauté them in a skillet with a bit of oil until softened (about 3 minutes). Set aside.
- Place one tortilla on a clean surface. Spread half the cheese evenly over one half of the tortilla.
- Top the cheese with half the turkey, sautéed veggies (if using), and any optional add-ins.
- Sprinkle with the remaining cheese.
- Fold the tortilla in half, covering the filling.
- Heat butter or oil in a large skillet over medium heat.
- Carefully place the folded quesadilla in the pan. Cook for 3-4 minutes per side, or until golden brown and the cheese is fully melted and gooey.
- Remove from heat, let cool slightly, and cut into wedges. Serve immediately.
