Ingredients:

  • 4 oz (115g) Lean Roast Beef, thinly sliced
  • 1.5 oz (43g) Sharp Cheddar Cheese, thinly sliced
  • 1 Whole Wheat Sandwich Roll (about 2-3 oz)
  • 1 teaspoon Olive Oil (5ml)
  • 1/2 cup thinly sliced onion (40g)
  • 2 tablespoons Light Mayonnaise (30ml)
  • 1 teaspoon Prepared Horseradish (5ml)
  • 1/4 teaspoon Dijon Mustard (1.25ml)
  • Pinch of Black Pepper
  • Optional: Fresh Dill or Parsley, chopped

Instructions:

  1. Prepare the Aioli: In a small bowl, combine the light mayonnaise, horseradish, Dijon mustard, and black pepper. Stir well and set aside. Add fresh herbs if desired.
  2. Toast the Roll: Slice the sandwich roll in half. Lightly brush the inside of each half with olive oil. Toast in a toaster oven or pan.
  3. Assemble the Sandwich: Spread a generous amount of the horseradish aioli on both halves of the toasted roll.
  4. Layer the Ingredients: On the bottom half of the roll, layer the roast beef slices. Top with the thin slices of cheddar cheese and the sliced onions.
  5. Melt the Cheese (Optional): Place the assembled sandwich (bottom half only) under the broiler (grill) for a minute or two, until the cheese is melted and bubbly. Watch carefully to prevent burning! Alternatively, warm in a toaster oven.
  6. Finish and Serve: Top with the other half of the roll. Serve immediately.
